Hidden Ingredients
Beyond heavy metals, most commercial hot chocolate mixes contain a troubling array of additives:
- Corn syrup solids from GMO sources [3]
- Artificial flavors derived from crude oil or coal tar [3]
- Mono and diglycerides that may contain harmful trans fats [3]
- Cellulose gum, typically made from wood pulp [3]
Health Impacts

- Whole-grain flour for crusts

It has been cultivated for at least a thousand years, and is probably the first mushroom ever to be farmed [39].
Shiitake is the source of two very well-studied extracts of proven pharmacological value: lentinan, a cell wall polysaccharide rich in Beta-glucans; and LEM (Lentinula Edodes Mycelium Extract), a protein-bound polysaccharide complex, over 25% proteins (dry weight), which contains all the essential amino acids (lysine and arginine are especially plentiful), vitamin D, B-complex vitamins, vitamin C, ergosterol, minerals (including calcium, magnesium, potassium, phosphorus, and zinc), enzymes, carbohydrates and lipids [40].
